Rapid thawing – direct transfer from a subzero treatment temperature to 4C conditions
Slow thawing – raises freezer temperature from subzero treatment temp to the acclimating temperature of –2C at the controlled rate of 2C/h – results in less drastic temperature change when moved to 4C
